5-INGREDIENT MEXICAN MEATLOAF WITH CHIPOTLE PEPPERS

INGREDIENTS MARINADE – 1 lb Lean Ground Beef – 1/4 cup Ketchup (mix in meatloaf) – 1/3 cup Ketchup (top of meatloaf) – 2 Chipotle Peppers in Adobo Sauce – 1 Egg – 1 cup Cheddar Cheese – 1/2 tsp Salt & Pepper

This is a fun twist on traditional meatloaf and the smoky peppers help achieve that Mexican flare. Meatloaf is comfort food! Just 5 ingredients so not a lot of effort or rare ingredients.  

WHY YOU SHOULD MAKE  MEXICAN MEATLOAF

Use your food processor to combine the chipotle peppers in adobo with ketchup and egg.  

Add ketchup, seasonings to the ground beef in a mixing bowl. Don't forget the cheese! It'll be a little wet, but its supposed to be. 

Add the ground beef mixture to a foil lined pan and scoop the remaining ketchup over the top for a glaze. 

Allow the meat to rest after baking it for 45 minutes to set.
