INGREDIENTS  – Baby red potatoes – Salt and pepper – Celery – Scallions – Red bell pepper – Mayonnaise – Honey – Harissa or paprika

Edamame and celery offer great texture to this potato salad.  You can prepare the potatoes in advance and mix in the dressing when its time to serve.

Cook up your quartered baby red potatoes until they are fork tender.

While the potatoes are cooling in the fridge, mix up the harissa mayonnaise mixture.

Combine all the veggies in a large mixing bowl, add the harissa mayonnaise and enjoy!
