So many flavors are built into this salad! You can use this dish for a meal prep recipe, it's good for lunch or a side dish. it's a quick dish to serve at summer cookouts or potlucks.
Clean the shrimp, devein it and remove the tails if you prefer. Add the soy sauce to the shrimp in a bowl.
Heat up hot water, add in the rice noodles and let them soften. Then drain the water and add them back to the pot with soy sauce to coat them.
To the same skillet, cook the veggies and seasonings.
Add whisked eggs to the top of the cooked veggie mixture in the skillet and let them cook a few minutes.
Gently stir in the noodles and finish it with the shrimp. Allow it all to warm through before serving.
