Discard the chicken skin from a rotisserie chicken and then remove the meat from the breasts, thighs, legs and wings.
Use the chicken carcass to make a delicious chicken broth!
Saute the onions in a skillet and stir in the seasonings and broth.
Add the chocolate and remaining ingredients to the pan. Stir it in so it's melted, then puree in a blender before returning it to the pan to simmer.
Heat the pan and add in the butter, then the bloomed saffron and water.
Roll the chicken mixture into the tortillas, then add them to the baking pan. Pour some sauce over the top and top with shredded cheese. Bake about 10 minutes, until melty!
More than likely, there will be leftover mole sauce so reserve it for another meal.
