These taquitos are easy to make.  Have fun serving taquitos both for dinner, a snack or as an appetizer! Because they are baked, they are healthier but you still get that crispy exterior and soft, flavorful chicken inside.

START THE TZATZIKI SAUCE BY ZESTING A LIME AND ADDING IT TO THE GREEK YOGURT, THEN LETTING IT SIT IN THE FRIDGE.

COMBINE GARLIC, SALT AND PEPPER IN A BOWL, THEN ADD IN THE CLEANED SHRIMP. SQUEEZE FRESH LIME JUICE OVER THE SHRIMP RIGHT BEFORE  SEARING.

HEAT THE SKILLET AND ADD IN THE SHRIMP. COOK UNTIL THEY ARE PINK. FLIP THEM OVER AND SQUEEZE LIME JUICE OVER THE SHRIMP.

GRATE THE CUCUMBER - SKIN ON! - AND SQUEEZE OUT THE WATER FROM IT, THEN STIR INTO THE GREEK YOGURT MIXTURE.
