Summer months are great for enjoying fresh corn on the cob and this is another recipe you can really taste the sweetness! A one pan dinner is awesome for making less dishes and getting everything ready quickly. The fresh flavors with the blackened seasoning compliment each other.
Prepare an extra batch of blackened seasoning and keep it on hand. It's also great on fish!
Season the chicken chunks with blackened seasoning.
Remove the corn from the husk. Don't leave behind the cream! Use the back of the knife to press against the cob and add it to the corn kernels.
Heat your skillet and cook the chicken. When its cooked through, put it on a plate and use the pan for the next step.
Add some oil and let it heat up again, then add in the veggies and seasonings. Stir it and let it soften, then add in the corn and broth. Bring those to a simmer.
Add the cornstarch slurry to the pan and let the corn mixture thicken.
Place the chicken pieces back into the pan, nestling into the corn. Add some cilantro and cotija cheese over the top and serve.
