Dan Dan noodles are traditionally spicy but this version is less spicy so the whole family can enjoy it. This recipe comes together quickly, making it perfect for the weeknight dinners. You're in for a treat with several flavors mingled together- slightly sweet, tangy, nutty and savory.
Sambal Oelek is an Indonesian, ground raw chili paste with red chili peppers, vinegar and salt. It’s easy to find and easy to use in a great many recipes where you want to add a kick, so it will not go to waste.
Prep the scallions and the garlic. Use the whites of the scallions for the dish, the greens are more for garnish.
Combine the sauce ingredients.
Heat the oil in a skillet and cook the ground chicken. Add the garlic and white scallion pieces.
Stir the chicken broth into the chicken mixture. Then add spinach into the chicken mixture along with the scallion greens and half the sauce. Allow the sauce to thicken as it simmers.
Add in about half the noodles to the pan and combine in the sauce. Add more noodles as you can. Serve and enjoy!
