Enjoy trying a new version of potato salad that's sure to be a hit! It's creamy, crunchy and a must have at summer cookouts. Smoky harissa takes your traditional potato salad with mayonnaise up a notch. This dish is a good side for lunch, dinner or at picnics.
Don't have mayonnaise? Sour cream, creme fraiche, or Greek yogurt are all acceptable substitutes.
ZEST THE LIME, CUT IT IN HALF. PREPARE MEDIUM SIZE CHUNKS OF THE RED BELL PEPPER.
COOK YOUR BABY RED POTATOES TO FORK TENDER.
WHILE THE POTATOES ARE COOLING IN THE FRIDGE, MIX TOGETHER THE HARISSA MAYONNAISE.
DICE UP THE VEGGIES AND ADD THEM TO THE MIXING BOWL WITH THE POTATOES. STIR IN THE MAYONNAISE MIXTURE AND ENJOY!
