Greek Ground Chicken and Feta Pasta Casserole with Kale is a one pot meal where everything, including the pasta cooks together. It's an easy family dinner!
16 oz Ground Chicken Breast Extra-virgin olive oil, Salt, Black pepper 1 teaspoon Dried Oregano 3 teaspoons Garlic, minced 3 cups Chicken Broth 2 cups 1% Milk 4 tablespoons Cornstarch 1 teaspoon Dried Oregano 10 ounces Campanelle Pasta, dry 3/4 cup Parmesan Cheese 6 ounces Feta, crumbled 2 cups Fresh Kale, chopped
Add ground chicken to hot pan with oil. Add oregano, salt, and pepper. Cook for 3-4 minutes and then add the garlic and stir. Cook for another 3-4 min. Pour 1 cup of broth and scrape up all of the browned bits from the bottom
Mix the milk and cornstarch, then add the casserole dish. Add the ground chicken and broth. Add 2 cups of broth, dried oregano, parmesan, and the dried pasta. Stir to combine.
Last, mix in the chopped kale and feta cheese. Mix again and press down with a spoon to ensure that again the pasta is submerged into the liquid.
