STOVETOP CHICKEN, ZUCCHINI RICE CASSEROLE

This zucchini and chicken dinner is incredibly easy to make. It all comes together in one skillet!

INGREDIENTS – MUSHROOMS – ZUCCHINI – GARLIC – SALT, PEPPER – EVOO – RICE – CHICKEN BREAST – CHICKEN BROTH – ALMOND MILK – CORNSTARCH – PARMESAN CHEESE – ITALIAN PARSLEY

Cooking this meal is simple because everything goes into ONE skillet in stages. Start with sauteeing the mushrooms.

SET THE MUSHROOMS ASIDE AND ADD IN THE ONION AND GARLIC TO THE PAN, SAUTEEING UNTIL THEY ARE GOLDEN. FINALLY, ADD IN THE ZUCCHINI.

CREATE A CORNSTARCH SLURRY WITH UNSWEETENED ALMOND MILK AND STIR IT IN WITH THE VEGGIES AND BROTH.

STIR IN THE COOKED RICE, CHICKEN PIECES AND MUSHROOMS. FINALIZE IT WITH THE PARMESAN CHEESE.
