RICOTTA SAUCE PASTA WITH BACON AND MUSHROOMS

INGREDIENTS  – Bacon – Mushrooms – Edamame – Garlic – Half and half – Ricotta cheese – Parmesan cheese – Oregano – Salt and pepper – Rigatoni pasta

This sauce comes together quickly but is a rich meal that definitely can be categorized as comfort food.  This creamy sauce works well with the salty bacon and sticks to the pasta well.  Edamame adds color and texture to this 30 min meal.

While the pasta is cooking in a heavily salted water, cook the bacon in a skillet.

Add in the sliced mushrooms and let them sear on each side before adding in the edamame and garlic.

Use the half and half to deglaze the pan before adding in the ricotta cheese and seasonings.

Add the pasta to the pan with about 1/4 cup of reserved pasta water. Combine and let it thicken up. Serve with chopped parsley!
