Eggs are really amazing!  Aside from being incredibly delicious scrambled, poached, fried, soft or hard boiled, they are incredibly healthy! 

One little egg has 6 grams of complete protein.  Your body needs protein to form muscle, repair tissue, and transport nutrients.  Proteins are made of amino acids and our bodies can produce all but 9.  Those 9 are essential amino acids that must consume from food.  Not all foods contain all 9, but a balanced diet can provide all 9.  Food that has all 9 essential amino acids is called a Complete Protein and examples are red meat, poultry, fish, milk, cheese, yogurt, soybeans, quinoa, and EGGS.

For this recipe, there are actually two levels of prep that you can tackle.  You can simply dice the onion, chop red pepper, mince the garlic, measure out the spices, chop the cilantro and store it all in the fridge and call it day.

Or you can take it one more step and cook the sauce entirely and store it in the fridge.  The the night or morning you plan to eat it, warm it up in a skillet, then add the eggs and cheese.  

So, let’s get right into the cooking.

 

COOK YOUR SKILLET EGGS IN SPICY TOMATO PEPPER SAUCE 

Preheat oven to 300 degrees. Place 4 tortillas on a sheet pan, brush with olive oil, and lightly salt. Heat for 10 minutes, then flip tortillas over and cook for another 10-15 or until crisp.  I tried this step in advance, but the tortillas became chewy and when reheated, overcooked.  Therefore, I don’t recommend doing this ahead, just do it while you are cooking the sauce/eggs.

For the sauce, you need a large frying pan or skillet.  I use my absolute favorite 12″ Ceramic Pan, which is great because food really does slide right off with minimal oil and I don’t have to worry about food sticking and burning.  It comes with a lid, which is perfect for these types of sauce that need to simmer.  

The sauce is soooo simple!  Heat 1 tbsp olive oil in a large sauté pan preheated on medium heat. Add onion, red pepper, and garlic. Crack the eggs, one at a time, in a separate cup so that you can fish out any shell pieces. With a spoon, make a ‘hole’ in the sauce and pour the egg into it. Do this for all 4 eggs, making sure to space them evenly over the sauce. Sprinkle the cheese over top.  TIP: I like to sprinkle it all around the yoke, leaving that beautiful yellow yoke poking through.

  1. Dice half of onion.

  2. Chop red pepper into ½ inch pieces.  Mince 2 cloves garlic.  Store the onion, red pepper, and garlic together in fridge if doing ahead.

PREP-AHEAD TO MAKE YOUR RICOTTA STUFFED SHELL COOKING KIT

For this recipe, there is very little that you need to prep ahead, unless you are preparing the entire casserole and baking it later.  I have made that assumption, but if you are immediately cooking, the instructions are to simply move it right into the oven.For this recipe, the intent is to use either leftovers, a store bought rotisserie chicken, or use chicken that you have roasted ahead for several meals.

So, the first step is to prepare the already cooked turkey or chicken by shredding it using either your fingers (I think the easiest way) or using 2 forks.

In a large mixing bowl, add all Filling ingredients except the shredded turkey and combine together.  Once mixed thoroughly, add the turkey and fold in.

Cook the Jumbo Pasta Shells to al dente (not fully cooked). The shells will finish cooking in the oven.  When the shells are done boiling, strain them and run cool water over them to stop the cooking.

To a 9×11 Casserole Dish (3 Quart Dish) add a small amount of the tomato sauce from the whole tomatoes, just enough to cover the bottom of the pan. Spread the sauce around. Sprinkle a pinch of Italian Seasoning all over.

Make the Tomato Sauce by emptying the whole tomatoes and remaining tomato sauce into a bowl. Crush the whole tomatoes using a fork or just your hands/fingers. Add 1 tsp Italian Seasoning, 1 tsp minced garlic, 1/2 tsp salt, 1/2 tsp ground pepper.

Stuff each of the pasta shells with some of the Turkey Ricotta filling. You want to try to get 15-16 shells stuffed (you probably will not have dish space or filling for more than this), so do not over-stuff, as you can always go back and add more stuffing. Also, I like to stuff first, then layer into the dish. It’s easier to go back and re-stuff before adding to the sauce.

Once you have them all stuffed, start layering them in row by row starting with the short end of the dish and going across.

COOK YOUR RICOTTA STUFFED SHELLS

Bake in a Preheated 350 F degree oven for 45 minutes.

  • 15 oz Whole Milk Ricotta Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • 2 cups Shredded Turkey or Chicken
  • 2 tsp Garlic, Minced
  • 3 tsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper

Sauce and Topping

  • 28 oz Whole Peeled Tomatoes
  • 1 tsp Garlic, Minced
  • 1 1/2 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 cup Mozzarella
  • 1/4 cup Grated Parmesan Cheese

Instructions

Prep Ahead to Make your Kit

  1. Shred Turkey or chicken with fingers or using 2 forks.

  3. Once mixed thoroughly, add the turkey and fold in.

  4. Cook the Jumbo Pasta Shells to al dente (not fully cooked).  The shells will finish cooking in the oven.  When the shells are done boiling, strain them and run cool water over them to stop the cooking.

  5. To a 9x11 Casserole Dish (3 Quart Dish) add a small amount of the tomato sauce from the whole tomatoes, just enough to cover the bottom of the pan.  Spread the sauce around.  Sprinkle a pinch of Italian Seasoning all over.

  6. Make the Tomato Sauce by emptying the whole tomatoes and remaining tomato sauce into a bowl.  Crush the whole tomatoes using a fork or just your hands/fingers.  Add 1 tsp Italian Seasoning, 1 tsp minced garlic, 1/2 tsp salt, 1/2 tsp ground pepper.

  7. Stuff each of the pasta shells with some of the Turkey Ricotta filling.  You want to try to get 15-16 shells stuffed (you probably will not have dish space or filling for more than this), so do not over-stuff, as you can always go back and add more stuffing.  Also, I like to stuff first, then layer into the dish.  It's easier to go back and re-stuff before adding to the sauce.

  8. Once you have them all stuffed, start layering them in row by row starting with the short end of the dish and going across.
