When Dave and I were first married, I started making my enchilada casserole with shredded chicken breast and cheese.  I have made this casserole for years.  But when I had kids, I started adding pasta to it to bulk it up and appease their love for pasta.  Then, when I started the Talking Meals Blog, I wanted to make my casserole more interesting, so I added chorizo because, well, everything tastes better with chorizo, am I right?  Check out my Chicken & Chorizo Enchilada Casserole and my most recently created, White Enchilada Casserole with Chicken & Veggies.  Clearly I have a Mexican Casserole addiction so this new Ground meat Taco Casserole is just the next progression and I am owning it!

PREP-AHEAD FOR YOUR GROUND CHICKEN TACO CASSEROLE

You are busy, so these are the steps you can do a day or two in advance to prepare food ahead!  (See the recipe below for more details)

Ready for the bonus for this recipe?  This entire casserole can be made ahead on Sunday and then cooked in the oven for 30 minutes on Monday or Tuesday.  Then you can reheat the leftovers again on Wednesday or Thursday – so great, right?

There are 3 main steps to this recipe:

1. Make the Meat, Tomato, Bean filling – this is simply browning the meat with spices and seasoning, and then adding in the tomatoes, green chilis, and beans.  

This Skillet Ground Chicken Tomato Sauce with Ricotta is a delicious and simple one pan meal.  Ground chicken is seared until it gets a super browned, flavorful crust.  Then garlic, vegetable broth and tomatoes are added and cooked down into a delightful sauce that really lets the tomato shine with a meaty bite from the chicken.  After pasta is mixed in, creamy Ricotta Cheese is dolloped on and fresh basil added to garnish.  It's perfection! Bellissimo!

2. Mix tomato sauce with the cumin, chili powder, and salt

3.  Now, assemble the casserole!  There will be 3 layers of tortillas, so make sure that you have about 3-4 tortillas per layer.  To start, cover the bottom of the casserole dish with 4 corn tortillas.  Then layer on half of the meat and bean mixture, sprinkle 1/4 of the scallions, then the add 1/3 of the shredded cheese.

Do this again for the second layer.  Then top with a third and final layer of tortillas, the tomato sauce, and the remaining cheese.

At this point, you can either store the taco casserole in the fridge covered or cook it.

COOK YOUR TACO CASSEROLE:

To cook, simply bake in the oven 350F degrees for 30 minutes!  Then serve with sour cream and garnish with remaining scallions.

Ingredients

Ground Chicken and Beans

  • 1 lb Ground Chicken
  • 1 tbsp Extra Virgin Olive Oil
  • 15 oz Black Beans
  • 15 oz Canned Diced Tomatoes
  • 4 oz Canned Green Chilis
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 2 tsp Oregano
  • 1 tsp Salt

Tomato Sauce

  • 8 oz tomato sauce
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1/2 tsp Salt

Make Casserole

  • 12 Corn Tortillas, 6"
  • 3 Scallions (green onions)
  • 12 oz Shredded Cheese Cheddar or Taco Blend
  • 1/2 cup Sour Cream
  • 1 Tomato, large

Instructions

Prep-Ahead Steps

  1. This entire casserole can be made on Sunday and then cooked in the oven for 30 minutes on Monday or Tuesday.  Then reheat again on Wednesday or Thursday.

  2. Thin Slice the scallions. Most will be used in the casserole, but save some of the greens for garnish.

  3. Preheat a large skillet on high.  Add the olive oil to coat bottom and then add the ground chicken.  Break it up, but let it sit to sear and cook for about 5 minutes.  Then mix so that all sides of the chicken cook for another 5 minutes.  

  4. Add diced tomatoes, green chilis, chili powder, cumin, and oregano.

  5. Open the can of black beans and before adding them, smash them a bit in the can using a fork.  Then add them to the chicken.  Stir to combine and let simmer for 10 minutes to cook down.

  6. Mix the tomato sauce with the Chili Powder, Cumin, and Salt.

Assemble the Taco Casserole - You will need a 9x9 or 10x10 casserole dish.

  1. There will be 3 layers of tortillas, so make sure that you have about 4 tortillas per layer.  To start the first layer, cover the bottom of the casserole dish with 4 tortillas.

  2. Next add 1/2 of the meat mixture on top of the tortillas.  Sprinkle with 1/4 of the Scallions.

  3. Then top with 1/3 of the shredded cheese.  Repeat!  Cover with tortillas, then meat mixture, scallions, and cheese.  

  4. Then the final layer of tortillas and then cover with tomato sauce and the remaining cheese and 1/4 of the scallions.  The remaining scallions are for garnish.

Bake your Casserole

  1. Preheat the oven to 350 F degrees. 

  2. Bake the casserole covered for 30 minutes until hot all the way through.  While the casserole is cooking, dice the tomato.

  3. Plate, drizzle with sour cream, sprinkle with diced tomatoes, and garnish with scallions.

It’s one of those dishes that tastes so decadent and ‘bad for you’, that you would never think there are healthy veggies inside.  So what’s in here?  Are you ready for it?  COLESLAW MIX and ZUCCHINI!  The Coleslaw mix is so great, because the cabbage and carrots are already shredded to the perfect size.  When they are cooked they are a similar texture and size as the shredded chicken so they blend right in and take on the flavors of the casserole.  Zucchini similarly gets layered into the casserole and blends right in.  I am not kidding, my family could not even tell!

PREP-AHEAD TO MAKE YOUR WHITE ENCHILADA CASSEROLE

This ENTIRE casserole can be made in advance, then frozen or stored in the refrigerator.  

You will need a 9×9 Casserole Dish for this recipe.

Ok, back to the Prep!  First, roast and shred the chicken breast. You can also slice the scallions and the zucchini ahead of time.

The sauce has green chilis and taco seasoning to give it that Mexican Enchilada White sauce flavor.  However, my version of the sauce replaces the heavy sour cream with coconut milk and a corn starch thickener  which still gives you the thick, rich, and creamy texture you want.

You can stop here and assemble later or just go ahead and assemble ahead of time, as well as cook.

The assembly is easy-peasy as you simply layer everything on.  No getting frustrated trying to roll the enchiladas first and watching them break or crack and then fall apart as you try to transfer them to the casserole!  Simply layer away.

COOK YOUR MEAL:

Once everything is assembled, bake the White Enchilada Casserole covered for 45 minutes in a 400 degree oven.

After 45 minutes or until the center is fully heated through, take the casserole out and add the final layer of cheese and scallions to the top and bake uncovered for another 10-15 minutes until the cheese is melted and golden.

Ingredients

Chicken (Tip: you can also buy a rotisserie chicken to replace these ingredients)

  • 8 oz Chicken Breast
  • 1/2 tsp Extra Virgin Olive oil
  • Salt
  • Pepper

White Enchilada Sauce

  • 2 tbls Corn Starch
  • 1/4 cup Water
  • 1/2 cup Chicken Broth
  • 3/4 cup Coconut Milk
  • 4 oz Green Chilis
  • 2 tsp Taco Seasoning

Other

  • 12-14 Corn Tortillas
  • 2 cups Coleslaw Mix
  • 1 Zucchini
  • 16 oz Cheddar Cheese, Shredded split into thirds to ensure enough for the 3 layers
  • 4 Scallions (Green Onions)

Optional for Garnish

  • 1 Tomato, diced
  • 1/2 cup Sour Cream
  • 1 Scallion, finely sliced

Instructions

Prep-Ahead

  1. Preheat oven to 400 degrees F

  2. Rub the chicken breast with olive oil, sprinkle with salt and pepper and roast in the oven for 20 minutes or until internal temp reaches 165 degrees F.  Take the chicken out and let cool for 10-15 minutes until cool enough to shred.  Shred into small bite-size pieces.  TIP: buy a cooked rotisserie chicken so all you have to do is shred it! 

  3. While the chicken is roasting, make the sauce by starting with the corn starch slurry.  Mix 2 tbls corn starch into 1/4 cup cold water until completely dissolved.

  4. To a small sauce pot, add the chicken broth, corn starch slurry, taco seasoning.  Bring to a simmer stirring until it gets thick.

  5. Whisk in the coconut milk then turn off the heat.

  6. Add the Green Chilis and mix in completely.

  7. Finely Dice the Scallions.  Slice the zucchini on the bias into 1/4 inch slices.

  8. At this point you can either move on to the assembly or put the scallions, zucchini, sauce and the chicken in the fridge until you are ready to assemble.

Assemble the Enchilada Casserole

  1. Spread a very thin layer of sauce on the bottom of the casserole dish, so that the tortillas don't stick.  Next, lay down 4 tortillas, or as many as you need to cover the bottom and making sure you have enough for 3 layers.

  2. Spread a layer of the sauce over the tortillas.

  3. Spread half of the shredded chicken over the sauce.  Then sprinkle scallions over the chicken.

  4. Sprinkle the coleslaw mix of cabbage and carrots over the chicken.

  5. Add shredded cheese.  NOTE, you should have 16oz of cheese, which you will need for 3 layers in total, so be sure to portion it out so that you only use 1/3 of the cheese in this first layer.

  6. Next layer another 4 tortillas over the cheese, then sauce, add the rest of the chicken, and another layer of the coleslaw cabbage and carrots.  Now comes the zucchini.  Lay the slices to create a single layer.  Use any extra to fill in any major holes.

  7. Add another layer of cheese (using another 1/3 of the cheese) and scallions over the zucchini.

Cook!

  1. Preheat oven to 375 degrees F.  Then bake the casserole covered with a glass lid or aluminum foil for 45 minutes.  

  2. Remove from the oven and add the final layer of cheese and scallions to the top and then bake WITHOUT a cover for another 15 minutes until the top is perfectly melted and golden.  Serve and Enjoy!
