Man, do I love me a good creamy soup!  But toss in some cheesy tortellini and salty sausage and I am in heaven.  That’s what we have here with my One Pot Creamy Chicken Sausage and Tortellini Soup.  The base is a silky, creamy chicken broth thickened with a simple roux and milk.  Carrots, onions, garlic, Chicken sausage, and zucchini bring so much flavor and texture.  Oregano brings an herb-y flavor and the tortellini give that delicious salty, creamy, hearty bite!

The beauty of this Chicken Sausage and Tortellini Soup is that is a complete and balanced meal with protein, grains, vegetables all in one pot.  There are many pasta recipes out there that tout their easy preparation in one pot or pan.  But to be fully balanced, they really need to provide protein and vegetables too.

EQUIPMENT NEEDED FOR YOUR SAUSAGE AND TORTELLINI SOUP

For this recipe, you need a large (5-6 quart) pot. My prized possession dutch oven was perfect for this! Or any good quality enameled cast iron 5-6 quart dutch oven is great.

PREP-AHEAD STEPS FOR YOUR SAUSAGE AND TORTELLINI SOUP

We are all extremely busy and making dinner during the week can be overwhelming. Here are the steps you prepare in the day(s) in advance and store in the fridge as your meal Kit… (See the recipe below for more details)

As this is a One Pot meal, everything cooks in stages in one singular large pot!  However, you could speed things up a bit by searing the zucchini in a separate pan while you make the soup.  I would still sear the sausage in the soup pot, however, as it imparts great flavor to the soup.

For the prep, you can peel and dice the carrots and onions up to 4 days ahead, along with with the minced the garlic.  These 3 veggies can be stored together.

You can also slice the zucchini and the sausage into 1/4 to 1/2 inch slices and store separately in the fridge up to 3 days in advance.

Can I use raw or pork sausage?

Yes, you definitely can add in the sausage of your choice.  Raw Italian sausage links would be great and are traditional.  Simply buy the meat in bulk or squeeze it out of the links to cook it before the soup.  

What else can be added to this soup?

I love the sweetness of the carrots and hearty bite of the zucchini in this soup.  But there are many other veggies that would be great in here.  You could add kale, spinach, mushrooms, or peas.  You can also add in white beans for more protein and to bulk it up.  It’s really up to you and your family preferences here, so have fun with it!

COOK YOUR SAUSAGE AND TORTELLINI SOUP

Preheat the large pot on Medium heat. Add Olive Oil and then the sliced zucchini in a single layer. Cook on the first side for 3-4 minutes to brown. Stir to flip the pieces over and sear the other side for 2-3 minutes. Transfer to a plate.

Do the same with the sausage and transfer to the same plate with the zucchini.

Add another tsp of olive oil to the pot and add the carrots, onions, garlic, oregano, salt and pepper. Stir and cook for 3 minutes. Then add the butter, olive oil, and flour. Stir so all flour is moistened and combined with the veggies. Whisk in the milk.

Stir in the broth and then bring soup up to a simmer and cook for 15 minutes or until the carrots are tender. Add back the sausage and the zucchini, plus the frozen tortellini. Stir, then cover and bring to a simmer, then cook for a final 10 minutes until the tortellini are warmed through.

You can cook this entire soup up to 5 days in advance!  Store it in the fridge in a tightly sealed container.  You can also portion it out and freeze it for up to 4 months.

Ingredients

Zucchini and Sausage

  • 1 Large Zucchini
  • 4 Precooked Chicken Sausage links
  • 4 teaspoons Olive oil

Other Soup Ingredients

  • 1 cup Carrots, diced
  • 1/2 cup onion, diced
  • 3 tsp garlic, minced (3 cloves)
  • 1 tsp oregano
  • 1/2 cup flour
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 1/2 cup milk
  • 5 cups Broth
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 12 ounces Frozen Cheese Tortellini

Instructions

Prep Ahead Steps

  1. Peel and dice the carrots and onions. Mince the garlic.

  2. Slice the zucchini in half lengthwise and then slice those halves in half. Slice into 1/2 inch triangles. Slice the sausage links into 1/4 to 1/2 inch slices.

Cook

  1. Preheat the large pot on Medium heat. Add 1-2 teaspoons of Olive Oil to the pot and then the sliced zucchini in a single layer. Cook on the first side for 3-4 minutes to brown. Stir to flip the pieces over and sear the other side for 2-3 minutes. Transfer to a plate.

  2. To the same pot, add another 1-2 teaspoons of olive oil and then the sausage slices in a single layer. Sear the sausage on the first side for 5-6 minutes. Stir to flip the pieces over and sear the other side for 2-3 minutes. Transfer to the same plate with the zucchini.

I love cooking, but I hate doing dishes.  I don’t know about you, but in my house, there are always dishes piling up!  That’s one of the reasons I LOVE this Mediterranean SHEET PAN DINNER for easy cleanup!  It has hearty and satisfying chicken sausage, creamy and bright zucchini. and crispy nutty chickpeas.  Everything is infused with Mediterranean flavors from the garlic, oregano, and olive oil.  Serve over quinoa with a few dollops of seasoned Ricotta and you gotta one heck of a delicious dinner!

Loaded with Protein & Fiber!

Sometimes feeding kids leaves you wondering if they are getting enough protein, vitamins, nutrients, and fiber.  This Sheet Pan Dinner has you covered, with over 18g of Fiber and 52.5g Protein!   The average sedentary woman needs 46g of Protein per day and about 25g of Fiber per day so this meal definitely keeps you on track to meet your daily needs!

The reason this recipe packs such a punch in both Protein and Fiber is because you are getting high quality inputs from different sources here.  While many foods give protein, not all are the complete proteins that you can get from meat, meaning they contain all 9 Essential Amino Acids.  Chicken, Chickpeas, and Quinoa ALL provide complete proteins, so this is especially important here.  Chickpeas and Quinoa are also great sources of Fiber.

For this recipe, you can prepare all of the ingredients in advance and simply roast them in the oven the night you want to eat this!

  1. Prep the Chickpeas
  2. Slice the Zucchini
  3. Slice the Sausage
  4. Cook the Quinoa
  5. Mix the Ricotta

Start by draining the chickpeas and rinsing them under cold water.  Store them in the fridge until ready to cook.

You can make the Quinoa up to 4 days in advance and store it in the fridge as well!  Start by measuring out 1 cup of uncooked quinoa and rinsing it in a strainer with cool water in the sink.  Then put the rinsed quinoa in a small-medium size pot with fitted lid.  Add 2 cups of water and 2 tsp of Chicken Base or a Bouillon cube.

Bring the water to a soft boil and stir to make sure the base or bouillon is dissolved.  Turn the heat down to the lowest setting, cover with fitted lid and cook for 20 minutes.  After 20 minutes, turn the heat off, but keep it covered for another 5 minutes or so as it starts to cool down.  Then fluff with a fork and transfer to storage container to store in the fridge until ready to reheat and eat.

Italian Chicken Sausage

Next slice the Chicken Sausage and store it in the fridge as well. 

For this recipe, I used pre-cooked Italian Chicken Sausage.  There are several brands now at stores.  If you want to use Raw Italian Chicken Sausage, you will have a choice between links or bulk.  If you buy links, you will want to pre-cook it yourself and then slice it for the recipe.  Or you can squeeze it out of the casings into bite-size pieces and cook them on the sheet pan.

Ok, the final prep-ahead step is to mix the Ricotta with garlic, oregano, salt, and pepper.

COOK YOUR MEDITERRANEAN SHEET PAN DINNER

Preheat your oven to 400 F degrees.  

Add the Chickpeas to a Large Sheet Pan. Drizzle with olive oil and then sprinkle with salt, pepper, 1/2 tsp garlic powder, and 1 tsp dried oregano. Toss the chickpeas in the seasoning until dispersed evenly and then spread them out into a single layer on the pan. Roast the Chickpeas in the oven for 15 minutes.

After 15 minutes, push the chickpeas to the side of the pan and add the zucchini slices in the center and the sausage slices on the other side. Drizzle olive oil on the zucchini and sprinkle with salt, pepper, 1/2 tsp garlic powder, 1/2 tsp Oregano. Flip the zucchini over and do the same to the other side. After 15 minutes, take the sheet pan out and add parmesan cheese on top of the zucchini. While everything is roasting in the oven, warm up the Quinoa in the microwave for 1 minute. Or you can put it in a pot on the stove with a tbls of water. Cover and reheat on low heat for 5 minutes, stirring to ensure it doesn’t burn.

To serve, plate a large scoop of Quinoa and top with some sausage, zucchini, and chickpeas. Sprinkle with parmesan cheese and add a dollop or two or three of the seasoned Ricotta.

  • 1/2 tsp Oregano, dried

Instructions

Sausage: If you are using raw sausage links, you have a choice:
