I first posted my Lemon Basil Chicken Salad recipe a year ago in August of 2017.  I still love the simplicity of that recipe with the bright and fresh flavors.  This time, however, I added even more flavor and texture with Grapes!

CHICKEN SALAD WITH GRAPES IS GREAT FOR LEFTOVERS & MEAL PREP LUNCHES

To add to the simplicity, this is a great recipe to use up leftover chicken or buy a rotisserie chicken and shred up the breast meat!  No need to cook from scratch!  Make this and eat right away or make ahead to eat during the week.  It is a great option for taking to work.  Top it over a spinach and carrot salad, scoop it with crackers, or eat on whole wheat toast. EASY PREP FOR YOUR CHICKEN SALAD WITH GRAPES 

If you do not have leftover chicken, then it’s super easy to roast.  Simply season with olive oil, salt, and pepper and put into 400 degree F oven for 25 minutes or until temperature reaches 165 degrees in center.  Once the chicken has cooled, cut it or shred it with your fingers or a fork into bite size pieces.

While the chicken is cooking, you can be preparing the few other ingredients…halve the grapes, slice the basil, finely chop the red onion, zest the lemon.

Add the shredded chicken, diced onion, and halved grapes to a medium to large mixing bowl.

Then make the dressing, which is simply mayonnaise, lemon juice, lemon zest, basil, and salt and pepper.

Add the dressing to the chicken and fold in until completely mixed.  Taste for seasoning and add S&P as needed.

Ingredients

Roast Chicken

  • 16 oz Chicken breasts baked or grilled with salt & pepper boneless and skinless
  • 1 tsp Extra Virgin Olive Oil
  • 1 tsp Salt or enough to season both sides of chicken
  • 1 tsp Fresh Ground Pepper or enough to season both sides of chicken

Lemon Basil Dressing

  • 1/4 cup Mayonnaise
  • 1 Lemon
  • 2 Tbls Fresh Basil leaves, finely sliced
  • Salt and Pepper to taste

Other

  • 2 Tbls Red Onion, finely diced
  • 1/2 cup Red Grapes green grapes are fine too

Instructions

  1. Preheat oven to 400 degrees F.

  2. Drizzle a little bit of Olive Oil and rub it all around.  Then sprinkle all sides of chicken with Salt & Pepper and roast in 400 degree oven for 25 minutes or until temperature reaches 165 degrees in center. Cool Chicken. Once cool, cut chicken into bite size pieces. Add to a medium-large bowl for mixing.

  3. Finely Dice onion and add to the chicken.

  4. Halve the grapes and add to the chicken.

  5. To a small mixing bowl, add the mayonnaise.

  6. Zest the lemon with the small end of a grater or lemon zester.  Add the zest to the mayonnaise.  Then halve the lemon and squeeze the juice from one half into the mayonnaise (be careful no seeds fall in). 

  7. Layer basil leafs and slice into thin strips and measure 2 Tbls. Add to mayonnaise.  Add just a pinch of salt and fresh ground pepper.  Mix all ingredients into the mayonnaise.  Taste for seasoning and add salt and pepper as needed.

  8. Pour the dressing over the chicken, onions, and grapes and fold it in until completely mixed through and combined.  Taste again for seasoning and add salt and pepper as desired.  Serve and Enjoy!!

Sunny Lemon Basil Chicken Salad

I love chicken salad and I am always experimenting with different ways to mix it up.  However, sometimes keeping it simple is better.  This Lemon Basil Chicken Salad recipe is just that…simple and delicious.  And anything with Lemon is just happy and sunny!  With a lemon basil creamy dressing mixed into the chicken, it’s fresh, light, but full of flavor. It’s also a great way to use up leftover chicken. You get the brightness from the lemon, the fresh and fragrant basil, and a slight bite from the onion….so yummy!

Every year I plant a small 2 by 6 foot garden in my small Hoboken, NJ backyard.  This year I planted tomatoes, jalapeños, dill, chives, carrots, and basil!  So far, the basil has been the most fruitful of the bunch, so I have been finding uses for it in a variety of recipes.  It adds flavor, depth, and color.  In this chicken salad, combined with lemon zest, you get a refreshing, glorious flavor.

Sunny Lemon Basil Chicken Salad

When I think of Summer, I think of gardens of fresh herbs and bright beautiful lemons.  This Sunny Lemon Basil Chicken Salad brings those Summer images together in one deliciously simple recipe. With a lemon basil creamy dressing mixed into the chicken, it's fresh, light, but full of flavor. It's also a great way to use up leftover chicken. You get the brightness from the lemon, the fresh and fragrant basil, and a slight bite from the onion....so yummy!

  • 1/4 Lemon, juice
  • 2 Tbls Fresh Basil leaves, finely sliced
  • 1.5 Tbls Red Onion, finely diced
  • 3 Tbls Mayonnaise
  • Salt and Pepper to taste

  5. Add mayonnaise and mix all ingredients in the bowl

  6. Add salt & pepper to taste
  7. Plate & enjoy!
