Every year we go to my husband’s family for Thanksgiving in Maryland.  Therefore, I contribute 1-2 recipes, but I’m not the one in charge of the full Turkey Dinner.  This year, I decided to make Cheddar Honey Cornbread!  I love cornbread, but usually don’t eat it because it is not gluten free and I save my gluten intake for the stuffing!  So, this recipe is my contribution.  It’s a warm, comforting, scrumptious must-make recipe this Fall and Winter!

MAKE YOUR CHEDDAR HONEY CORNBREAD

For this recipe, I used a 9×9 Pan.  You could certainly use a round pan as well or even a muffin pan. I also recommend using parchment paper to line the pan, as it makes it so easy to remove the cornbread when it’s cooked.

Making this cornbread follows the typical dry-ingredient bowl and wet ingredient bowl instructions.  Combine them and then fold in the shredded cheese.

Pour the cornbread mixture into the parchment paper lined pan.  Spread it evenly with the spatula, but don’t worry that it isn’t smooth on the top as you will love those peaks and valleys when it cooks and as you spread butter or drizzle honey on to eat it.

Then, it’s a quick 20 minute bake in a 400 F degree oven.  Remove and let cool for 15-20 minutes, then ull the cornbread out of the pan using the parchment paper.

I love to break the cornbread apart with my hands as opposed to clean cuts with a knife as I love the rustic look, but of course, cutting allows you to get the exact number of pieces you need, so do what works best!

Ingredients

Dry Ingredients Bowl

  • 1 1/4 Cup Cornmeal
  • 3/4 Cup Gluten Free All Purpose Flour Add 1 tsp Xanthan Gum if it does not already have it
  • 3 tsp Baking Powder
  • 2 Tbls Sugar
  • 1/2 tsp Nutmeg

Wet Ingredients Bowl

  • 1 cup Milk
  • 1/4 cup Softened Butter unsalted
  • 2 eggs
  • 3 Tbls Honey

Other

  • 2 cups Shredded Cheddar
  • 1/4 cup Honey for drizzling on top optional Optional

Instructions

  1. Preheat the oven to 400 F degrees. Line a 9×9 Pan with parchment paper.

  2. Mix all Dry ingredients in a bowl.

  3. In a separate bowl, mix the wet ingredients.

  4. Slowly mix the dry ingredients into the wet with a whisk until fully combined and smooth. Then using a spatula, fold in the shredded cheese.

This 3-Ingredient Banana Bread could not be any EASIER! It is moist, delicious, and so incredibly simple that you can whip it up in 5 minutes, then bake it in the oven.

This 3-Ingredient Easy Banana Bread recipe is seriously THE EASIEST cake or bread recipe that I have ever made!  It started out as a sort-of experiment, but to my amazement, came out the perfect texture, was incredibly moist, and tasted delicious!

So what is this magical recipe?  What are those 3 simple ingredients?  Well, of course, bananas is one.  They need to be over-ripe bananas that when you look at them you think, yep those have seen better days and you may typically just toss into the trash.  BUT DON’T!  Use these perfectly nearly-black-all-over beauties for this recipe.  BTW, you can also slice these over-ripe bananas up and freeze them for smoothies or banana ice cream! And the key ingredient?  Drum roll please… PANCAKE MIX!  Pancake mix is great for those times when you are in a pinch and need to make something fast.  It includes several of the ingredients in a banana bread recipe…flour, baking powder, sugar, salt…all pre-measured and combined for you.  NOTE: I used Aunt Jemima Complete Pancake Mix Buttermilk.  I also tried Maple Grove Farms and both worked great.

I do recommend adding Vanilla Extract to this when you mix the pancake dry ingredients with Water.  The vanilla just makes this recipe extra delicious and is such a great pairing with the bananas.  That is the 3rd ingredient, as I am not counting water or the Extra Virgin Olive Oil needed to coat the pan.

That’s it!  Mix 2 Cups Pancake Mix with 3/4 Cups Water and 1 tsp Vanilla Extract.  Then add 3  over-ripe bananas and mash.  If it is still too dry, add another teaspoon of water until the dry ingredients are all moist.

Mix to combine, pour into a bread pan and then bake in the oven 350 degrees F for 1 hour or until a toothpick comes out clean.  If the toothpick comes out wet the first time, put the bread back in for 5 more minutes at a time until done.

Ingredients

  • 2 cups Pancake Mix, COMPLETE mix only requiring added water note, I tried 2 different pancake mixes, Aunt Jemima and Maple Grove Farms and both worked great
  • 1 tsp Vanilla Extract
  • 3 Bananas, over-ripened
  • 3/4 cups Water
  • Extra Virgin Olive Oil Spray

Instructions

  1. Preheat the oven to 350 degrees F.

  2. In a large mixing bowl, add the pancake mix, water, and vanilla extract.  Mix to combine.  If it is still too dry, add another tablespoon of water and again until the dry ingredients are all moist.

  3. Peel and break up 3 bananas into the bread mixture.  Mash up the bananas into the mix and stir to completely combined.  Keep some chunks as this will help to keep the bread extremely moist and textured. 

  4. Pour into a bread pan that has been sprayed with a little extra virgin olive oil.

  5. Bake in the oven for 60 minutes or until a toothpick placed into the center of the bread comes out clean.  You can start checking at 50 minutes.  If the toothpick comes out wet the first time, put the bread back in for 5 more minutes at a time until done.
