You can marinade the chicken in the sauce for 1 hour up to 8 hours.  You can also freeze the chicken in marinade at this point and use it up to 4 months later!

 

COOK YOUR SESAME SWEET CHILI CHICKEN  

When you’re ready to cook, remove the marinated chicken breasts from the marinade using tongs, saving the marinade to cook.  Add the chicken to a preheated skillet with olive oil.  Sear for 2-3 minutes until the the chicken starts to char. Because of the sugar in the sauce, you need to be careful that the chicken doesn’t burn. It’s ok to get a little char as that will be lots of flavor.

Flip the Chicken and sear for another 2-3 minutes. Then add 1/4 cup water and the remaining marinade. Cover the skillet and cook for 8-10 minutes until the internal temperature of the chicken reaches 165 F degrees or the chicken feels firm with a little give.

PREP-AHEAD TO MAKE YOUR TURKEY ASIAN LETTUCE WRAPS COOKING KIT

Start by prepping the veggies and the turkey (or chicken).  Slice the red pepper and the carrots thin. Slice thin or shred the brussel sprouts. Then mince the garlic and the ginger.  Store the carrots and the garlic separate.  You can store the red pepper, brussel sprouts, and ginger together.

Shred the cooked turkey or chicken. Note, use whatever leftovers you have! If you don’t have leftovers, you can buy a rotisserie chicken or simply roast turkey or chicken breast in the oven for 20 minutes in 400 F degrees.

Next, clean and gently pull off the outer leaves of the lettuce. You will want 3-4 leaves per person. If the leaves are really large, you can cut them in half. Place in a large bowl lined with damp paper towels. Cover with another damp paper towel and then seal with plastic wrap or a lid.

Make the Garlic Soy Marinade and dipping sauce: In a small bowl, whisk 3/4 cup soy sauce, 1/4 cup water, 3 Tbls honey, 2 cloves minced garlic, 1 tsp ground pepper.

In a large mixing bowl, add the Mayonnaise, Vinegar, Sesame Oil, Honey, and Sesame Seeds. Mix to combine. Shred the cabbage and add to the bowl. Mix to combine with the dressing and store covered in the fridge.

COOK & ASSEMBLE YOUR TURKEY ASIAN LETTUCE WRAPS

Because I love to make this as a meal, I like to add Rice to the lettuce wraps so they are hearty and filling.  And my daughters want rice or pasta in pretty much every meal ;).  You can use rice noodles or just leave the starch out all together!  If you include rice, you will want to just make the rice according to package instructions.

Preheat a large skillet on high heat and add extra virgin olive oil to coat surface. Add the sliced carrots and cook for a few minutes, just so they start to sweat and get soft.

Then add the Brussel Sprouts, Red Pepper, and Minced Ginger. Stir in 1/2 cup of the Garlic Honey Soy Sauce and let cook for 5 minutes stirring every minute or so.

Next add the shredded turkey to the pan along with another 1/2 cup of the sauce. Stir to mix and cook for another 5 minutes until the sauce reduces.

Ingredients

  • 2 Cups Turkey or Chicken, shredded white meat is preferrable
  • 2 Cups Brussel Sprouts, shredded
  • 1 Cup Carrots sliced into thin strips
  • 1 Red Pepper, sliced
  • 2 Tbls Ginger, minced
  • 1 tsp Extra Virgin Olive Oil or Coconut Oil
  • 1 Cup Basmati Rice uncooked
  • 1 Iceberg Lettuce head
  • 2 tsp Sesame Seeds Black or White are fine

Garlic Honey Soy Sauce

  • 3/4 Cup Soy Sauce
  • 1/4 Cup Water
  • 3 Tbls Honey
  • 1 tsp Sesame Oil
  • 2 Cloves Garlic minced

Red Cabbage Slaw

  • 3 cups Purple Cabbage, shredded
  • 1 tsp Sesame Oil
  • 1 tsp white wine vinegar
  • 1/4 cup Mayonnaise
  • 1 tbls Honey
  • 1 tbls Sesame Seeds Black or White are fine
  • 1 tsp Soy Sauce

Instructions

Prep Ahead

  1. Make the Garlic Soy Marinade and dipping sauce: In a small bowl, whisk 3/4 cup soy sauce, 1/4 cup water, 3 Tbls honey, 2 cloves minced garlic, 1 tsp ground pepper.

  2. Slice the red pepper and the carrots thin. Slice thin or shred the brussel sprouts.  Then mince the garlic and the ginger.  Store the carrots and the garlic separate.  You can store the red pepper, brussel sprouts, and ginger together.

  3. In a large mixing bowl, add the Mayonnaise, Vinegar, Sesame Oil, Honey, and Sesame Seeds.  Mix to combine. Shred the cabbage and add to the bowl.  Mix to combine with the dressing and store covered in the fridge.

  4. Shred the cooked turkey or chicken.  Note, use whatever leftovers you have!  If you don't have leftovers, you can buy a rotisserie chicken or simply roast turkey or chicken breast in the oven for 20 minutes in 400 F degrees.

  5. Clean and gently pull off the outer leaves of the lettuce.  You will want 3-4 leaves per person.  If the leaves are really large, you can cut them in half.  Place in a large bowl lined with damp paper towels.  Cover with another damp paper towel and then seal with plastic wrap or a lid.

Cook and Assemble!

  1. Make the rice according to package instructions.
  2. Preheat a large skillet on high heat and add extra virgin olive oil to coat surface. Add the sliced carrots and cook for a few minutes, just so they start to sweat and get soft.

  3. Then add the Brussel Sprouts, Red Pepper, and Minced Ginger. Stir in 1/2 cup of the Garlic Honey Soy Sauce and let cook for 5 minutes stirring every minute or so.

  4. Next add the shredded turkey to the pan along with half of the sauce.  Stir to mix and cook for another 5 minutes until the sauce reduces.
