Hey There! How are you today? It’s Saturday and I am feeling happy. Could be because I have these 2 smiley faces sitting next to me!
It is the first day where the temperature is starting to come down and I can feel Fall on the horizon. The girls go back to school on Sept. 6, so we are headed out for some back-to-school shopping this weekend and we have friends coming over today for a Burger Challenge…stay tuned for more on that! So, today I am just happy for these little joys.
Super Simple Steak, Tomato, & Pepper Pasta
Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes
Servings 2 people
Ingredients
- 1 cup Leftover Steak Any beef, pork, or chicken that you have on hand
- 1 ½ cups Veggies – I had tomato and Red Pepper chopped
- 2 Tbls Basil leaves – 1-2 Tbls chopped
- 1 cup Chicken base broth
- ½ cup Sour Cream
- 1 teaspoon Extra Virgin Olive Oil
- Salt & Pepper to taste
Instructions

Cut all ingredients into bite size pieces

Add Veggies to heated sauté pan with 1 teaspoon olive oil. Cook until soft.

Add 1 teaspoon Chicken Base and 1 cup water to pan

Stir to combine and cook liquid down for about 2 minutes stirring often

Stir in ½ cup sour cream until melted into the sauce evenly and starts getting thicker.

Add Salt & pepper to taste

Boil Water and add rice noodles I usually make enough for even more leftovers!

And steak to sauce and just heat through
