Chicken Tomato Basil Pasta
This is a really simple and delicious angel hair pasta dish with chicken, tomato, parmesan, and fresh basil.  The flavor of the seared chicken combined with freshness from the basil and tomatoes and then the slightly salty and nutty parmesan come together in perfect harmony.  It’s a great family dish for both adults and kids that is so easy, you will want to cook it all the time!​

Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1x2 inch pieces
  • 1 Tsp Italian Seasoning
  • 1 TBLS Olive Oil
  • 2 cloves garlic minced
  • 1 cup basil leaves chiffonade
  • 1/2 teaspoon crushed red pepper flakes optional
  • ½ cup of freshly grated parmesan
  • 1 large tomato cut into medium chunks
  • 2 Tbls Olive Oil
  • 8 ounces angel hair pasta
  • Salt & pepper

Instructions

  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  2. Season chicken with Italian seasoning, salt and pepper
  3. Heat olive oil in a large skillet over medium high heat. Add chicken and cook, flipping once, until cooked through, about 5-6 minutes on each side.
  4. To the chicken, add garlic, tomatoes, basil and red pepper flakes, if using, to the skillet. Cook, stirring occasionally, until the tomatoes begin to softened, about 3-4 minutes.
  5. Stir in pasta, parmesan and 1 Tbls olive oil until well combined, about 2 minutes; season with salt and pepper, to taste.
  6. Serve immediately, garnished with basil
