TEX-MEX  UNSTUFFED PEPPERS [SKILLET OR POT]

INGREDIENTS – Brown rice – Sweet bell peppers – Ground chicken – Olive oil – Onion powder – Garlic powder – Dried oregano – Chili powder – Ground cumin – Diced tomatoes – Green chiles – Corn tortillas – Cheddar cheese – Cilantro – Salt OPTIONAL TOPPINGS: Sour cream, shredded cheese and Cilantro

CHOP THE BELL PEPPERS AND CILANTRO. 

TIP

CORN TORTILLAS ACT AS A THICKENER IN THIS MEAL, DISSOLVING INTO THE MIXTURE. CUT THEM INTO 1" LONG, 1/2" THICK STRIPS.

USE YOUR DUTCH OVEN TO START PREPARING THE VEGGIES, STARTING WITH THE BELL PEPPERS. REMOVE THEM BEFORE COOKING THE GROUND CHICKEN.

WITH THE CHICKEN COOKED, ADD BACK IN THE PEPPERS AS WELL AS THE TOMATOES, GREEN CHILES AND TORTILLA STRIPS.

STIR IN THE COOKED RICE AND LET IT HEAT THROUGH. TURN OFF THE HEAT AFTER ABOUT 10 MINUTES AND STIR IN THE CHEESE AND CILANTRO.
