INGREDIENTS – Uncooked quinoa – Salt – Cauliflower florets – Black beans – Taco seasoning – Chili powder – EVOO – Flour tortillas – Cheddar cheese – Sour cream – Fresh cilantro – Tomatoes

BEGIN BY HEATING YOUR SKILLET AND ADDING SOME OIL. BROWN THE CAULIFLOWER SLIGHTLY BEFORE ADDING IN THE BEANS.

ONCE THE QUINOA IS COOKED, ADD IT INTO THE SKILLET AND COMBINE WITH THE BEAN MIXTURE.  NOW ADD IN THE SEASONINGS.

ASSEMBLE! I RECOMMEND WARMING YOUR TORTILLAS, EITHER IN THE SKILLET. THE MICROWAVE WILL ALSO WORK.

USING A CUTTING BOARD, LAY DOWN YOUR WARMED TORTILLA, SCOOP SOME QUINOA MIXTURE OVER IT, THEN ADD YOUR FAVORITE TOPPINGS.

ROLL THE TORTILLAS.

TO SERVE THE BURRITOS LATER OR FOR FREEZING, ROLL EACH BURRITO IN A PIECE OF ALUMINUM FOIL.
