INGREDIENTS – Wild rice – Chicken broth – Half and half – Garlic powder – Salt OTHER – Zucchini – Mushrooms – Scallions – Chicken breasts – Salt & pepper – Dried oregano – Ground thyme – Swiss cheese
Enjoy a warm and comforting casserole dish for dinner. It's fun to change up staples - white rice for wild rice is a good one. (although wild rice is not rice!) One pan for a meal means less clean up!
POUR THE WILD RICE INTO THE CASSEROLE DISH.
STIR IN THE REST OF THE RICE INGREDIENTS, COVER TIGHTLY WITH FOIL AND BAKE IT.
REMOVE THE PAN FROM THE OVEN, ADD IN THE CHICKEN, SCALLIONS, ZUCCHINI, MUSHROOMS AND SEASONINGS. BAKE IT COVERED.
ADD CHEESE SLICES TO THE TOP OF THE CASSEROLE AND BAKE IT AN ADDITIONAL 10 MINUTES.
