CHUNKY GAZPACHO RECIPE WITH RED ROASTED PEPPERS

INGREDIENTS – Tomato juice – Roasted red peppers – Garlic – Scallions – Cucumber – Green pepper – EVOO – Red Wine Vinegar – Salt & pepper

This light and flavorful dish can be served as a starter to a meal, incorporated as a side dish or enjoy it for lunch.  Gazpacho is perfect in all seasons! Fun to serve in shot glasses! Roasted red peppers add a sweetness to the tomato base. Green peppes and cucumber bring a fun crunch to each bite.  There's no cooking in gazpacho - just letting it set in the fridge a day in advance.

YOU CAN USE V8 OR ANY TOMATO JUICE FOR THE BASE OF YOUR GAZPACHO, THEN MAKE TO FINELY MINCE YOUR GARLIC.

DRAIN AND PUT THE ROASTED RED PEPPERS INTO YOUR FOOD PROCESSOR. YOU CAN LET IT REMAIN AS CHUNKY AS YOU LIKE.

TIME TO COMBINE THE REMAINING INGREDIENTS INTO THE SAUCE. SLICE AND DICE THE VEGGIES, ADD THE RED WINE VINEGAR, SEASONINGS AND THEN SALT & PEPPER TO TASTE.

PULL THE GAZPACHO FROM THE FRIDGE AND SERVE IN A BOWL. DRIZZLE WITH OLIVE OIL FOR THE FINAL TOUCH!
