Ingredients: Flank steak Kitchen twine Salt & pepper EVOO Onions White Button Mushrooms Garlic Egg Italian parsley Fresh Basil Parmesan Goat Cheese
Make the mushroom stuffing
Using a food processor, add the mushrooms and pulse until they are pea size.
cook the stuffing mixture
Saute the onions in a hot skillet then add in the mushrooms. Cook down the mixture until the moisture cooks off and season with salt & pepper.
combine the mushroom stuffing
add the remaining stuffing ingredients to a bowl. Once the onions and mushroom mixture is cool, add it to the bowl.
stuff the steak
Oil the steak down and then season with salt & pepper. Then spread the mushroom stuffing in an even layer over the raw steak. Begin to roll the steak, without squeezing any out of the edges.
cook the steak
Use cooking twine to tie the steak together. Begin by broiling the steak 10 minutes, then finish baking it. It's important to let the steak sit 10 min in a foil tent.
