EASY CHEESY CAULIFLOWER RICE [STOVETOP]

INGREDIENTS – Head of Cauliflower – 1/2 tsp Salt & Pepper – 1 cup Vegetable Broth – 1 tsp EVOO – 1 cup Milk – 2 tbsp Cornstarch – 1 tbsp Salted Butter – 1.5 cups Shredded Cheddar Cheese – 1 tbsp Italian Parsley

Cauliflower is so good for you, so finding ways to prepare it that you enjoy will be beneficial.  This veggie takes on the flavors of what you prepare it in so it's very versatile - riced, mashed, etc! Having a traditional rice side to meals is nice to put together quickly and this cheesy cauliflower is a kid-friendly recipe!

WHY ENJOY MAKING CAULIFLOWER RICE WITH CHEESE

USE A FOOD PROCESSOR TO RICE YOUR CAULIFLOWER VS USING A KNIFE TO DICE UP SMALL PIECES IN A UNIFORM SIZE. YOU CAN MANUALLY RICE THE VEGETABLE ON A CHEESE GRATER BUT IT WILL TAKE MORE TIME.

RICE THE CAULIFLOWER INTO UNIFORM SIZED PIECES.

ADD THE CAULIFLOWER TO THE SKILLET YOU'RE USING WITH BROTH.  KEEP A CLOSE EYE ON IT SO IT DOESN'T BURN. 

MOVE THE RICE TO A BOWL AND USE THE SAME SKILLET TO PREPARE A HOMEMADE CHEESE SAUCE. USE A CORNSTARCH AND MILK SLURRY INSTEAD OF A HEAVIER FLOUR VERSION. 

COMBINE THE CHEESE SAUCE WITH THE CAULIFLOWER RICE.
