INGREDIENTS – 1/2 cup Sour Cream – 1/2 cup Cream Cheese – 1/2 cup Mayonnaise – 2 tsp Curry Powder – 1/4 tsp Salt – 1/4 tsp Pepper – 1/4 cup Scallions – 1/2 cup Red Pepper – 1/2 cup Raisins – 32 oz Chicken Breast  – 1 tsp EVOO

You can serve this as a lunch, folded into a wrap.  Serve this salad over a bed of spinach.  It makes a great appetizer served over mini toast pieces and shared at a party or gathering.  The curry isn't overpowering so the whole family can enjoy this dish. 

PREPARE THE CURRY DRESSING USING A FOOD PROCESSOR OR BLENDER.
