Dice onion Make the Sriracha Mayo Chop the parsley.  Dice the pickles. Clean the potatoes and then dice into 1/2 inch cubes.

Cook Ground Beef

Cook the ground beef in a hot skillet for 3 minutes to brown. Then add diced onions and cook for another 5 minutes. Transfer the beef and the onions to the casserole dish with the potatoes.

Make Cream Sauce

To the pan, add butter & flour and whisk to combine. Slowly whisk in the broth and then milk. Turn off the heat.  Whisk in the sour cream, oregano, salt, and pepper then pour over the potatoes and beef.

Mix & Bake casserole

Add the shredded cheese and then mix to combine everything together. Bake at 400F for 40 minutes covered. Remove cover and bake for 10 minutes more. LET REST for 10 minutes.
